The white wine of the Domaine de Frégate is made from white grape varieties, so it will be called "blanc de blanc". It represents 10% of the production, ie about 15,000 bottles. The main varietal is Clairette, which is blended with secondary grape varieties such as Ugni blanc, Rolle (or Vermentino) and Sauvignon. Cold pressing takes place only after several hours of pellicular maceration, the purpose of which is to improve the extraction of aromas.
The elegance of our white wine is done on its aromas of exotic fruits and white flowers, the mouth is of a rare finesse and agrees with the cooking of the sea (shells), grilled fish, or all simply as an aperitif .
