PRESENTATION AND PRODUCTION OF WINE
The rosé wines DOMAINE DE PONTFRACT IGP Varois in Provence come from the parcels of the domain surrounded by a cirque of hills of the Jurassic period. The limestone and clay-poor soil contains many tuff fragments of high porosity and low density, which allow the soil to warm up quickly from the first rays of the sun. The grapes reach a good maturity with an optimum balance of sugar and acidity. The vinification in rosé is a mixture of tradition and modernity: destemming, crushing, cold maceration of the grapes, followed by a bleeding of the must that is fermented under controlled temperature 18 ° - 20 ° C to extract the maximum of aromas. IGP wines, according to French regulations, come from a specific department or zone.
