Hand cut flowers from fresh harvested broccoli (Brassica Oleracea). They are cleaned, blanched and coated with glucose from maize and maltodextrine from maize and air dried.
The length of the dried flowers is about 1.5-2 cm, florets > 25 mm max. 3.0% (based on the number of intact florets), fines < 5 mm max. 5.0% (based on weight of total product).
The broccoli content should be at least 33%. The leafy fraction should be slight.
