PRESENTATION AND PRODUCTION OF WINE
The sparkling wines CANDELON RESERVE Chardonnay brut are made from a base wine made from Chardonnay grapes specially planted for this purpose in the center of Var, Provence. Chardonnay is a grape with high aromatic potential that contributes to the reputation of the greatest white wines of France. The practice of advanced winemaking techniques according to strict specifications established by the company "LES VINS BRÉBAN" with its partners winemakers allows the development of quality sparkling wines. Following a vinification and a second fermentation, called "frothing", the sparkling wines CANDELON RESERVE Chardonnay brut remain 90 days on lees and yeasts. Then a cold stabilization of the wine precedes its filtration and bottling. The bottles rest on slats for 3 months before marketing.
