Principle
According to Berhagger's sedimentation value method test the α - Amylase activity index in grain.
Powder grain (such as wheat flour) suspension in the boiling water bath can quickly paste, different amylase activity cause different liquefaction degree of starch of gelatinization, and then different falling speed of mix stick in gelatinization, the falling value shows the difference of Amylase activity, Low value shows high activity.
Falling number is expressed by the seconds needed of mix stick drop a certain height in free falling. -
