PRESENTATION AND PRODUCTION OF WINE
The wine DOMAINE DE LA CHAPELLE SAINT VICTOR AOP Coteaux d'Aix-en-Provence is the fruit of the very Mediterranean blend of Grenache and Cinsault, enhanced with a touch of Syrah. Syrah enhances the fruitiness and bouquet of this wine by also providing increased roundness and length in the mouth. The wine comes from the Domaine Costes in Lambesc, which belongs to the Lefèvre family for more than 10 years. The estate is located on the southern slope of the Costes chain in Lambesc and consists of 20ha of AOP vineyards Coteaux d'Aix en Provence and 2ha of olive trees. The sandy loam soil, ideal for growing grapes, covers archaeological treasures. Excavation campaigns have highlighted a rich and important Roman occupation. Later, around the tenth to eleventh centuries, the site and the surrounding lands were ceded to the abbey of St Victor in Marseille, giving it its current name. The monks of the abbey worked the land and planted the vine. After destemming, the grapes undergo cold skin maceration. The musts obtained by bleeding are then decanted and then vinified at a temperature of 16 ° C.
