PDO Côtes de Provence
Terroir:
Located between the Massif des Maures and the Esterel, south facing lands, resulting from ancient alluvium represented by marine pliocene composed of fine sands and clays.
Grapes:
The Rolle 70% grown in Provence always brings balance and finesse, Semillon 30% gives roundness and elegance.
The vineyard :
Vines trellised on 5 threads, plowing of the grounds and grassing mastered a row out of two, without the use of the chemical fertilizers, pesticides and herbicides, harvest only by hand transport in box.
Vinification:
Compliance with the Biological specifications, the harvest is destemmed, followed by a short film maceration, pneumatic pressing then low temperature fermentation in French oak barrels, aging on fine lees, clarification, filtration and bottling at the Domaine.
Tasting notes:
Very beautiful pale pale gold dress. Expressive and complex nose combining smoky, toasty aromas, white fruits, pineapple, pear, ripe banana. The mouth is ample full, greedy and of a great persistence. The wood is well melted with a sloped finish, apricot.
Food and wine associations:
A wine that will happily accompany fish in sauce, white meats, exotic cuisine, cheeses from goats and sheep or blues.
