PDO Côtes de Provence
Terroir:
Located on the ancient terroir of Fréjus between the Massif des Maures and the Esterel, south facing lands from ancient alluvial deposits represented by marine pliocene composed of fine sands and clays.
Grapes:
70% Syrah and 30% Cabernet Sauvignon make this wine.
The vineyard :
Vines trellised on 5 threads, plowing of the grounds and grassing mastered a row out of two, without the use of the chemical fertilizers, pesticides and herbicides, harvest only by hand transport in box.
Vinification:
Respect of the Biological specifications, the harvest is destemmed, trampled. The fermentation and the maceration is carried out under controlled temperature, classic breeding in clarification stainless tank then filtration and bottling at the Domaine.
Tasting notes:
Deep ruby color. Nose of black fruits with slightly spicy characters, coffee and vegetal tip. Good attack, mouth sweet, pleasant, soft tannins and spicy finish.
Food and wine associations:
A tasty wine to enjoy with marengo veal, grilled meat or roast poultry.
