tasting: nose is blood on this vintage with a smoke shade enhanced by black fruit and spices. Mourvèdre is expressed here almost like on the most famous terroirs of our neighbours in Bandol. The mouth, straight in attack, presents a lovely delicacy by its mid-palate spherical side which gives it a beautiful elegance, accented by a liquorice finish.
Vinification: Traditional Vinification typically Burgundian. Manual harvesting and sorting on table in the cellar. Destemming and vatting in whole grains without crushing. Alcoholic fermentation in vats tapered wood & stainless steel with pumping over and followed by head of maceration post fermentation hot. Devatting after 20 to 30 days, then funneling in old Burgundy parts of a wine. Matured for 12 months undergrowth, Assembly then rest of 3 additional months in tank before bottling.
