can be described this wine as a classic among the roses of the Appellation 'Côtes de Provence. This classicism translates the accuracy and richness of its aromatic palette, on the one hand, and the sobriety of its label developed in line with the Bordeaux tradition. This gourmet wine will be excellent partner of creative modern cuisine using, inter alia, products and exotic spices.
Tasting: More complex than the cuvée Rollier, Castle is characterized by 2013 by one side very citrus on the nose associated with a spicy note of cardamom. In the mouth, it feels like a fullness and a more assertive wealth. It is a wine complete and according to our very first returns, much appreciated in gastronomy.
Vinification: Mechanical harvest between 5 and 8 o'clock in the morning. Fermentation in stainless steel vats resistor preceded by a traditional static racking. Ageing on the Lees for 3-4 months.
