PRESENTATION AND ELABORATION OF WINE
DUC DE RAYBAUD's quality rosé wines are made from a base wine made from 100% Pinot Noir grapes specially planted for this purpose in a suitable exhibition area. Pinot or Pinot Noir, is a vine variety widespread in France. It is a noble, early-maturing variety that can be grown in the harsh climatic conditions of northern Europe. The juice of this grape variety, like all pinots, is colorless and can therefore be used to obtain whites as well. Thus, in Champagne, it is very often vinified in white. It can also be used to make rosé sparkling wines by pressing more of this grape (to allow the extraction of tannins and dyes from the skin). DUC DE RAYBAUD 100% PINOT BLACK is vinified according to a very strict specifications (determination of the ideal date of harvest, vinification at low temperature after refrigeration and filtration of musts, specific yeast) established by the company "LES VINS BRÉBAN" and its partners-winemakers. Fruit of a second fermentation, called "mousse", the wines remain 90 days on lees and yeasts. Then a cold stabilization of the wine precedes its filtration and bottling.
